Reduce the heat to a low boil, stirring occasionally, and cook for 15 to 20 minutes or until the potatoes are tender when pierced with a fork.
  2. While they cook, preheat the oven to 350°F and spray a 9×13-inch baking dish with nonstick cooking spray. Set aside.
  3. Drain the potatoes in a large colander and allow them to drain until most of the steam has stopped. This rids the potatoes of excess moisture.
